The main genealogical websites hold many of the main records which we rely on to solve questions about our ancestors. But they do not have everything which is online. The boutique databases are those smaller websites which often carry records that the larger websites may not have. These records are usually local in nature and can help us fill in missing gaps concerning our ancestors' lives.
